Ahascragh Distillery is located in an old mill complex, dating back to the early 1800’s, in the scenic village of Ahascragh, Co. Galway. The village is situated in an area of natural beauty, 50 minutes from Galway city and 10 minutes from Ballinasloe/M6 motorway. Up until the 1950s the mill was a working facility, processing grain into flour. Located in the heart of the village and steeped in history, the mill complex has remained derelict for the past 70 years. The owners are giving the building a new lease of life with plans for a world class visitor experience and hospitality destination, within a working distillery. The plans for the distillery have been drafted to meet the highest environmental standards. It will be powered by renewable energy using zero emissions innovative technology. Ahascragh’s goal is to produce some of the first carbon neutral spirit in Ireland.


We are looking for a dynamic leader with appropriate qualifications and with excellent communication and organisational skills. The distillery will be commissioned at the end of 2022. It is anticipated that the successful candidate will be recruited in time for the installation and commissioning of equipment with our process engineers. This is an exciting opportunity to join our team at a critical phase in this project.

Qualifications & Experience:

  • Appropriate third level qualification in distilling or relevant subject and 2 – 3 years experience working in the distilling or brewing industry
  • Qualifications and/or experience in engineering, microbiology, fermentation, process management or food science may also be considered
  • Experience working in a laboratory setting is desirable but not essential
  • Experience working in areas such as project management, supervision of budgets, automated processes and managing staff is desirable

Key Responsibilities:

  • Operating all aspects of the spirit making process – grain intake, milling, mashing, fermentation, distillation, and site utilities, water treatment, effluent and energy storage system, blending, bottling line and labelling management; Logistics coordination for domestic duty paid and duty suspended, EU EMCS shipments and third country shipments
  • Developing, optimising, and monitoring key production processes
  • Ensuring product quality standards are achieved
  • Equipment and site maintenance management
  • Overseeing scheduling of production runs, sourcing of raw materials, stock control and warehousing
  • Monitoring and ensuring a safe and efficient operation; compliance with site safety, health, and strict hygiene standards
  • Monitoring production costs, ensuring that costs are compliant with assigned budgets
  • Managing distillery staff, ensuring adequate and appropriate staffing levels to meet production goals, mindful of budgetary constraints
  • Cask stock management including inventory software management, cask filling, palletisation, disgorging
