We are a husband and wife team from Dublin. Having lived and worked in countries across Europe, the US and Asia, we returned to Ireland with the dream of turning our passion for craft Irish spirits into a family business. We set our sights on opening a whiskey and gin distillery in the West of Ireland. When we visited the old mill in Ahascragh, County Galway, we fell in love with its story; the beautiful stonework, the history of the buildings and the character of the small village just drew us in.
Ahascragh Mill dates back to the early 1800s and up until the 1950s processed grain into flour. Located in the heart of the village and steeped in history, the mill complex has remained derelict for the past 70 years. We are giving the building a new lease of life with plans for a whiskey experience and hospitality destination. The Ahascragh Distillery will be an eco-distillery, powered by renewable energy with a drive and passion to be carbon neutral.
The Distillery will feature a visitor centre, offering tours, tastings, workshops and events space. The visitor experience will be an intimate and unique experience, showcasing the history of the old mill, with a permanent exhibition of the salvaged mill equipment. The experience will have something for everyone to enjoy. It will be a place to learn about distilling, Irish whiskey and the history of the Ahascragh mill itself.
Opening soon is The Old Mill Shop & Café, located just across the road from the distillery. We are working with Billy Moore Metalworks to repurpose some of the mill equipment to create bespoke furniture pieces inspired by the mill. It will truly be a celebration of the mill and of the village itself. The Old Mill Shop & Café will be a meeting place for locals and visitors alike. You will be able to enjoy a cup a coffee, overlooking the mill stream and shop some of our brands instore.
We want to hire local where possible and would love to hear from anyone interested. You can visit our Jobs page or send your C.V. and a brief cover letter telling us a little more about yourself and what you hope to achieve by being part of the team to jobs@ahascraghdistillery.com.
We’ve been welcomed with open arms to the village of Ahascragh and look forward to doing the same when we open our doors! In the meantime, you can sign up to our newsletter at the bottom of this page and stay up to date with news and announcements.
See you soon,
Gareth and Michelle McAllister.
